Sour Cream Coffee Cake



It has been a while since I've shared a recipe with you here on the blog. I tried a new recipe for a pound cake last week that I had high hopes for, and even photographed, but it was only okay and I couldn't in good conscience recommend it. Very sad. This coffee cake, on the other hand, I can heartily recommend!


My husband's parents and grandmother visited us this past weekend, or more accurately, visited their new grandson I should say. Ha! Anyway, I made this coffee cake to have on hand for a breakfast treat. Yum!

The recipe comes from my trusty Betty Crocker cookbook. I was so excited when I made this because for the first time in the history of my fluted bundt pan, the entire cake came out intact! No patchwork necessary! The only change I made to the recipe was to double the glaze. What can I say? I like a lot of frosting. :)


Sour Cream Coffee Cake from Betty Crocker 
serves 16

INGREDIENTS

BROWN SUGAR FILLING
1/2 cup packed brown sugar
1 1/2 teaspoons ground cinnamon

COFFEE CAKE
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoons salt
1 1/2 cups granulated sugar
3/4 cups butter, softened
1 1/2 teaspoons vanilla
3 large eggs
1 1/2 cups sour cream

GLAZE
1/2 cup powdered sugar
1/4 teaspoon vanilla
2 to 3 teaspoons milk

PREPARATION

Heat oven to 350 degrees. Grease bottom and sides of a 12-cup fluted tube pan.

In a small bowl, stir filling ingredients until well mixed; set aside. In a large bowl, stir flour, baking powder, baking soda and salt until well mixed; set aside.

In another large bowl, beat granulated sugar, butter, 1 1/2 teaspoons vanilla and eggs with electric mixer on medium speed two minutes, scraping bowl occasionally. Beat about one-fourth of the flour mixture and sour cream at a time alternately into sugar mixture on low speed until blended.

Spread one-third of the batter (about 2 cups) in pan, then sprinkle with one third of the filling; repeat twice.

Bake about 1 hour, or until toothpick inserted near center comes our clean. Cool 10 minutes in pan on wire rack. Remove from pan to wire rack and cool 20 minutes. In small bowl, stir all glaze ingredients until smooth and thin enough to drizzle. Drizzle glaze over coffee cake. Serve warm or cool.

Yellow/Gray Floral Thank You Note


This card is similar to my last post, just changed up slightly. I chose a different flower image from PTI's Year of Flower Collection and stamped it across the white panel in Summer Sun ink.

I again die cut a double ended banner die and stamped my sentiment, from the Mat Stack 1 Collection set. I left the yellow button unadorned on this version. The floral panel was adhered to a Smokey Shadow card base.

The inside was finished the same as on my last card, with a single flower cluster stamped in the corner.

Red Floral Thank You Note

Happy Monday! Today's card is a simple thank you card. I used one of the images from PTI's Year of Flowers Collection set and stamped it repeatedly over a Vintage Cream card base using Ruby Red ink.

For the sentiment, I die cut a double ended banner die and stamped the words. I found a red button in my stash and threaded it with a small bit of raffia.

The inside is very simple, with a single flower cluster stamped in the corner.

Boy Banner Birthday



Yesterday I shared a feminine version of this card. Here is my take on a more masculine version. Instead of using the polka dot pennants from PTI's Banner Builder set,  I opted to use the striped ones. I also swapped out pink ink for blue on the first triangle and the sentiment. Small changes but I really think it changes the look and feel of the card.

Girl Banner Birthday


Here is a birthday card from my stash that I haven't posted yet. I used PTI's fun set Banner Builder for the cheery pennant and Think Big Favorites #12 for the sentiment.


I used the coordinating die to cut four of the triangular banner elements, then stamped them in a bright color scheme of Melon Mambo, Summer Sun, Kiwi Kiss and Only Orange. They didn't quite fit across the card, so I trimmed each of them down slightly. They are popped up with bits of foam tape.


The sentiment is a single stamp, so I used a post-it note as a mask so that I could stamp it in two colors.

Hydrangea Thank You


With a new baby in the house I'm not sure when I'll have time to do more crafting (let alone sleep or house chores!) but I do have a small stash of cards I completed just before our son was born that I never had time to post. Here is one of them!


The lovely hydrangea stamp is from the SU! set Because I Care. I stamped the bloom once onto the card stock panel, and a second time on a scrap piece of card stock. I then fussy cut five small petals from the scrap card stock, adhered a pearl to each center, and attached them to the main bloom with small bits of foam tape. The purple and green banners have been impressed with the Linen & Canvas impression plate.  I also lightly stamped some text from Text Style in the background.
